The red pepper is part of the tradition of Portuguese cuisine, whether in a simple salad or as a base for a stew or any other typical Portuguese dish. It is undoubtedly an obligatory presence in all the kitchens of their country. With a bright red color, intense and bittersweet flavor and liquid consistency it is ideal to accompany grilled meat, fresh and dry cheeses and also some conservas.
For José Gourmet Red Pepper Jam, they use Portuguese red pepper, as they have a large production region located between Ribatejo and Alto Alentejo. The production process of this jam is also unique and unusual. Once the red pepper is received, it is opened, the seeds are removed and sliced into generous pieces. It is then washed and chopped. Then they add the white wine vinegar and the sugar, remaining in low heat for a few hours until it is refined. After the jam is purified they start to pour, also manually, jar by jar and then proceed to pasteurization. When removed, they cool naturally and only the next day are all jars checked one by one to ensure that the pasteurization has been done correctly.
Finally, they clean the jars, label and pack them. One more production is ready!!
