As in all their jams, these fruits that they use are produced in Portugal and come from small local farmers, like strawberry, peach, plum and others not local like cherry. To achieve the perfect balance, in José Gourmet’s Red Berries Jam the quantities of fruit are different from each other, for example, for 1kg of cherries, you need 4kgs of strawberry, 3kgs of peach and 2kgs of plum. This is the only way they can guarantee that it stays balanced and pleasant.
After receiving the fruits they are prepared in different ways:
- Strawberry: washed and sliced manually in 4;
- Plum: washed, sliced in two, the stone is removed and sliced into thin pieces; they keep the peel of the fruit to preserve all its characteristics
- Peach: Washed, peeled, the stone is removed and then laminated into thin pieces;
- Cherry: washed, stone removed 1 by 1 and then goes whole.
After this phase it’s time to add the sugar and in low heat they will stir by hand for a few hours until it’s refined. After the jam is purified, they start to mix, also manually, jar by jar and then proceed to pasteurization. When they are removed, they cool naturally and only the next day all the jars are checked, one by one, to make sure that the pasteurization was correct.
Finally, they clean the jars, label and pack them. One more production is ready!!
