Pumpkin Jam is probably the most famous and appreciated Jam in Portugal and a little bit around the world. It was born from a very old recipe, when times were more difficult and agriculture was mainly for subsistence. Everyone had a piece of land and cultivated something. Many planted pumpkins to serve as food for the animals, others to cook and serve as a source of food for the family. That’s when the first recipe came up, when they decided to add sugar to the fruit and see how it would work. Thus was born the pumpkin jam that we know and appreciate so well today. Today there are several variations, from pumpkin jam with walnut, with almond, with pine nuts, among others. It is a very versatile product that can be used to accompany a cheese, or to fill a pie.
At José Gourmet, their jams are made with about 70% fruit and 30% sugar, based on old recipes used by their grandparents. No artificial chemicals are used and their conservation is done only by pasteurization in large pots with boiling water. The pumpkins they use are planted exclusively for them by small farmers to whom, year after year, we deliver the seeds of the best pumpkins of the previous year. Thus, they always guarantee that the quality and type of pumpkin are the best and have the best taste. After being picked, the pumpkins are peeled, cut by hand and placed in pots on a low heat, where they will stay for several hours until they are refined. Once refined, they add a generous amount of walnut and put it in jars, also manually jar by jar, to be pasteurized. When removed, they cool naturally and all flasks are checked, one by one, to make sure that the pasteurization was correct.
Finally, they clean the jars, label and pack them. One more production is ready!!
