    This extraordinarily high phenol Organic Chetoui registers the highest phenol count of the season and is among the highest in the world. It has delayed and significant “punchy” pepperiness and lingering bitterness signifying the healthy antioxidants. Contains notes of green tea leaf and hints of malt. True to its high phenol content, we’ve dubbed this fiery EVOO a “3 cougher!”

It is malty, creamy and displays notes of green apple and dried herbs. There is a nice astringency and bitterness on the back end. This beautiful field blend of two classic Italian varietals makes for a truly unique oil. Notes of fennel seed, cinnamon, and nutmeg lead to a clean and pungent finish. Pleasant bitterness compliments this complex but balanced oil, which has notes of dry grass, green olive, and a high fruitiness score. It's an excellent example of the Italian Variety.

  • This is one of our highest phenol olive oils for the Fall 2020 Harvest! Available through online ordering in 750ml size only. One of our highest phenol olive oils, this limited production early Kalamata has savory vegetal notes of arugula, Romaine lettuce leaf and green tea, giving it a unique distinctive flavor and astringency. The combination of picking the fruit at an extremely low green maturity index (early harvest) and minimal processing resulted in a high phenol content and extraordinarily high and healthful Oleocanthal properties (of 292ppm).
